Apple Cinnamon and Brown Sugar Belgian Waffles

Whether it's hearty stews and filling casseroles for dinner, pumpkin spiced muffins for breakfast and a glass of warm apple before bed, there's something about the Fall season that makes almost every meal better. 

With the abundance of apples we've had in the kitchen as of late, what with our countless weekend trips to the pumpkin patch and apple orchard, I've had to get a little creative when it comes to utilizing them in meals. Sure there's your standard apple pie (been there, done that) and your cinnamon apple bread and/or muffins with a vanilla glaze (also ancient history in our house) but lately I've been wanting to somehow incorporate them into breakfast and what better way than to stick 'em in a waffle?



I have a feeling this warm, delicious treat will be come a staple breakfast in our house this Fall season! Plates were licked clean all around the table!

What You'll Need: 
- A waffle iron
- Non-stick cooking spray
- Two apples, peeled and diced (I used the sweeter Roma apples)
- 2 cups cake flour
- 2 teaspoons baking powder
- 2 tbsp. melted butter
- 4 large eggs
- 1/3 cup light brown sugar
- 3 tbsp. cinnamon mixed with 3 tbsp. granulated sugar
- 1 tsp. vanilla extract
- 2 cups milk (I used fat-free)
- A pinch of salt

What You'll Do: 
- Start by turning your waffle iron on to heat. Spray both sides of your waffle iron with non-stick cooking spray. 
- In one medium mixing bowl, sift together the flour, baking powder and salt. Set aside. 
- In a second mixing bowl, whisk together the eggs, brown sugar, cinnamon and sugar mixture, vanilla extract and butter. 
- Add two cups of milk to the mixing bowl that contains your flour mixture. Slowly combine your egg mixture with your flour mixture. 
- Lastly, fold in your diced apples. Mix to combine but do not over mix.  

- Pour waffle mix into your iron, using just enough to cover the partitions. Close your lid and follow the cooking instructions for your particular iron. Mine cooks to a nice golden brown after 2-3 minutes. 

- Top with warm maple syrup and a dash of confectioner's sugar and enjoy!

  1. Looks delicious. It is still so hot here in Florida so a lot of fall dishes don't seem appropriate right now but this is perfect!!! Thanks for sharing!
